YOU WILL NEED:
- 400 g spaghetti from JARKA or Pasta Lenka;
- 2 tablespoons olive oil;
- 1 onion, sliced;
- 2 cloves of garlic, crushed;
- 800 g tomatoes (canned tomatoes can also be used);
- 1 teaspoon tomato paste;
- 1 teaspoon sugar (to taste);
- Salt and pepper to taste;
- Fresh basil or parsley for garnish;
- Parmesan for sprinkling (optional).
STEP 1
Fill a large pot with water, add salt, and bring it to a boil. Add the spaghetti from JARKA or Pasta Lenka and cook according to the package instructions until it becomes al dente.
STEP 2
In a deep pan, heat olive oil over medium heat. Add sliced onion and crushed garlic and sauté until softened.
STEP 3
Add fresh tomatoes or canned tomatoes (with juice) and tomato paste. Season with sugar, salt, and pepper to taste. Increase the heat and bring it to a boil.
STEP 4
Reduce the heat, cover the pan, and cook the sauce over moderate heat for 20-25 minutes, partially covered. Monitor to ensure the sauce doesn’t thicken too much.
STEP 5
Add the cooked pasta to the tomato sauce, stir to coat each spaghetti with the sauce.
Serve portions of pasta on plates, sprinkle with fresh basil or parsley, and, if desired, Parmesan.
