Millet Cutlets with Mushrooms and Smoked Paprika

Millet rarely takes center stage in the kitchen, even though it can be used to create surprisingly delicious dishes. These millet cutlets are a perfect example of how a simple grain can be transformed into a flavorful and comforting meal with mushrooms, cheese, and a crispy golden crust. Hearty, unique, and nothing like ordinary porridge.

You will need:

  • 1 cup ТМ JARKA millet;
  • 2.5 cups water;
  • 300 g mushrooms (champignons);
  • 1 onion;
  • 2 cloves garlic;
  • 1 egg;
  • 3–4 tbsp grated cheese;
  • 1 tsp smoked paprika;
  • 2 tbsp flour or breadcrumbs;
  • salt and black pepper to taste;
  • oil for frying;
  • fresh herbs for serving.

Step 1. Prepare the millet

Rinse the millet 3–4 times with hot water to remove any bitterness.

Place it in a saucepan, add water, and cook over low heat for about 20 minutes until soft.

The millet should become thick, almost like porridge.

Let it cool for 10–15 minutes.

Step 2. Make the mushroom mixture

Finely chop the onion and mushrooms.

Heat some oil in a frying pan:

  • Sauté the onion for 3–4 minutes.
  • Add the mushrooms.
  • Cook until all the liquid has evaporated and the mushrooms are lightly browned.
  • Add the garlic and smoked paprika, stir well, and remove from the heat.

Step 3. Mix the base

In a large bowl combine:

  • cooked millet;
  • mushroom mixture;
  • egg;
  • cheese;
  • flour;
  • salt and pepper.

Mix thoroughly.

If the mixture is too soft, add a little more breadcrumbs.

Step 4. Shape the cutlets

Moisten your hands with water and form small patties.

For an extra crispy crust, lightly coat them with breadcrumbs.

Step 5. Fry

Heat oil in a frying pan.

Fry the cutlets for 3–4 minutes on each side until golden brown.

Serving suggestions:

These cutlets pair wonderfully with:

  • sour cream and garlic sauce;
  • yogurt with fresh herbs;
  • roasted vegetables;
  • tomato salad.

Variations:

  • Replace the regular cheese with feta for a brighter flavor.
  • For a vegan version, omit the egg and add 1 tbsp starch.
  • If you enjoy spicy food, add a pinch of chili pepper.
