Tender Easter Paska “Sun of Easter”

Easter is a holiday of light, warmth, and family traditions. In every home it has its own special aroma — the aroma of freshly baked Easter bread. At TM JARKA, we believe the best recipes are born from love for simple ingredients and the desire to share warmth with loved ones. That’s why we offer you a recipe for a tender, fluffy Easter paska that will become a beautiful centerpiece of your festive table.

Ingredients
  • Wheat flour TM JARKA — 900 g.;
  • Warm milk — 400 ml.;
  • Eggs — 5 pcs.;
  • Sugar — 220 g.;
  • Butter — 180 g.;
  • Yeast — 40 g. fresh or 12 g. dry;
  • Raisins — 150 g.;
  • Orange or lemon zest — 1 tsp.;
  • Vanilla sugar — 10 g.;
  • Salt — ½ tsp
For the glaze
  • Egg whites — 2 pcs.;
  • Powdered sugar — 180 g.;
  • Lemon juice — 1 tsp

Steep 1. Prepare the starter

Dissolve the yeast in warm milk, add 1 tbsp of sugar and a few tablespoons of flour. Mix well and leave in a warm place for 15–20 minutes until a fluffy foam appears.

Steep 2. Prepare the base for the dough

Beat the eggs with sugar and vanilla sugar until light and fluffy. Add the melted butter, salt, and citrus zest.

Steep 3. Knead the dough

Add the starter to the egg mixture and gradually mix in the TM JARKA flour. Knead a soft and elastic dough.

Steep 4. Let the dough rise

Cover the dough with a towel and leave it in a warm place for 1–1.5 hours. It should double in size.

Steep 5. Add raisins

Rinse and dry the raisins, then gently mix them into the dough so they are evenly distributed.

Steep 6. Shape the paskas

Place the dough into baking molds, filling them about one-third full. Leave for another 20–30 minutes to rise again.

Steep 7. Bake

Bake the paskas in a preheated oven at 175–180°C (347–356°F) for about 35–40 minutes until golden brown.

Steep 8. Prepare the glaze

Beat the egg whites with powdered sugar until thick and glossy. Add a few drops of lemon juice.

Steep 9. Decorate

Spread the glaze over the cooled paskas and decorate with festive sprinkles, nuts, or dried fruits.
